Vegan Sausage Rolls


1 cup walnuts finely ground

1 12 oz package firm Tofu finely crumbled

1 cup Rolled Oats (I use organic)

1 onion finely minced

2 tsp garlic powder

I cup fresh bread crumbs (2 slices of bread processed in blender or food processor)

2- 3 TBSP of low Sodium Soy Sauce depending on taste.

If you have a food processor or vita mix, the easiest way to prepare this is to process the following items in this order, removing each item and placing in large mixing bowl when finished.

a. oats (roughly ground)

b. onion (finely processed)

c. walnuts (finely ground)

d. bread slices (crumbled)

e. Tofu (crumbled)

Mix all ingredients together. Then using pastry (use either puff pastry or whole wheat short crust below). Roll out in long sheets about 3 -4 inches wide. Place filling in the middle. Roll both edges to center where they should over lap (seal with a little water on finger or pastry brush). Cut into sausage roll size. Place on baking dish seam side down. Bake at 400 for 15-20 mins. until golden brown.

Vegetable Samosas

2 Potatoes finely diced
1 large carrot finely diced
2 cloves of crushed garlic.
1 Onion finely chopped
1 Cup of frozen peas
1 tblspn vegetable oil
2 tspn curry powder or your own spices according to taste
Salt, Pepper to taste.
1 cup of vegetable stock.

for Added protein you can also add 1 cup of cooked chick peas (Garbanzo beans)

Heat the oil in a frying pan, add the onion and garlic, mix in  the spices and fry until soft. Add the vegetables, seasoning and stir well until coated. Add the stock, cover and simmer for 30 minutes until cooked and the stock absorbed.


If going to fry can use Phyllo pastry. I prefer to bake as there is less fat. You can use either the short crust pastry recipe below or use Puff Pastry.  Using one package of puff pastry cut each sheet in halves and then 3rds. Roll out until either a circle or square. Place filling in the center and fold over (you will form either a hemi circle or a triangle). Seal the edges together. Bake at 400 for 15 mins.
